that non-red meat thing is still happening in our house.. So after having this wonderful belly pork..(slow roasted for three and a half hours)..
It was time for another chicken.. Again spatchcock it..
Marinated in ‘nandos’ lemon and herb..
Straight into the bars of the oven.. With a mix of potatoes juggled in olive oil, thyme and semolina flour. (For extra crunch!)..
A chimichurri of course!
Parsley , coriander , garlic, a couple drops of harrisa, sprouting onion tops, dried oregano , sherry vinegar and olive oil..

The chicken all cooked .. Covered in hot sauce.. (Not too hot!)..
And all plated up.. With some quick fire New Orleans rice..
