To use up the last if the ground pork I did for the hotdogs.. I made chorizo.. I have indeed nailed this I must say..
They are not the hung and dried type..
These are cookers .. Wonderful juicy spicy smoky flavours.. That leaking of oil. They are cool..
So added the Mr Fitz secret spices.. Left to let the flavours meld together ..
And hand cranked into sheeps casings.. The perfect casing for these..
Linked and left to bloom overnight in the fridge..
Vac packed for delivery today..
