Using leftovers -chicken wraps in so so easy flatbreads

thst chicken from the chicken and chips the other day has left us with lovely leftovers.. A good few meals to go on that.

This is one of them!

First though the flatbreads.. So simple indeedy..

Father Fitz was telling me about using self raising instead of all purpose flour in his flatbreads.. So let’s give that a go..

Equal weight of flour to natural yoghurt ..

With a drop of olive oil and a pinch of salt and a pinch of caster sugar..

Mixed up and kneaded till a smooth dough.  You can do this in the processor of you like.. It does make it easier! Yet not as smooth I think..
No need to wait on proving etc..

Just rolled out..

And onto the iron plate pan..

Let them puff up.. And flip em.. A swipe of butter to keep them extra moist.. Ahem.. (I just like the taste of butter to be honest with you..,)., 😉

The chicken chopped up small and chef ping can hot that back up for us.,

A salad of crunchy iceberg, green onion, baby plum tomato and shredded carrot and torn fresh coriander, with thick balsamic and a sprinkle of olive oil..

A quick yogurt number whopped up by whipping natural yoghurt with lemon juice and salt..

And all piled into the warm breads..

Stunning..

Those breads are awesome.. I love leftovers..
