i like smash burgers. I think they are a great chain.. And when one finally makes it over here?
(Well of course they will be at least another third of the price on top !)..
First let’s start with the meat.. Very nice scotch chick steak..
Trimmed down even further ..
And hand cranked through the mincer..
Dusted with onion powder, Bristol blend pepper, a touch of ground coriander, and a splash of Worcestershire ..
Ok.. Let’s park them a while..
Fries.. I love the garlic, rosemary and olive oil smash fries.. Like seriously love them..
So have gone for a Mr Fitz version.. Flat leaf parsley, garden Rosemary, salt and pepper, French garlic , very good quality olive oil and a smudge of butter..
So the spuds..
Great red potatoes crinkle cut..
And soaked in water salt and sugar..
A double fry..first in the uncle bens wok with straight up Mrs middletons oil..
The burgers , ? The iron pan heated up. A small piece of butter smeared on.. The round patty placed on.. Then the ‘smash’.. Well I don’t have the smash tool .. Think i will get a pal to make me one.. So place a piece of parchment on top of the party and squish it down.. This means that you get an amazing crust.. And the meat stays juice all the way through.. Let it cook up the sides.. So you can see it cooking.. Then flip..
And it ain’t long at all!
Just enough time to cut a couple of store bought brioche buns..
Double for me!
And for pudding?
A raspberry magnum..
