Autumnal eating – cottage puy pie 

it’s getting to that time of year for sure.. Still the occasional sunny day.. Yet the nip is in the air for sure.. Not quite stretched to putting the heating on .. 

Food for this kinda seasonality needs to be comforting, warming and with the dark eves something to warm the soul.. 

Cottage pie fits that bill perfectly!

First off browning good ground meat.. Beef of course as it is cottage and not shepherds pie after all! With carrots and onions.. 

 
Adding beef stock and pre soaked puy lentils, that gives it an extra dimension! 

  
Letting that all bubble down…

 

And while that does its blip blip blippin’ away..  
A mashy topping made by boiling up potatoes , swede and leeks.. 

 

Adding butter , white pepper, fine salt and two egg yolks.. 

And smudging it up with the stick blender.. 

That’s a feasty topping fit for the cottage puy pie.. 

 Into the oven to crisp up the top and warm up the filling.. 

Served up with peas.. 

   

And a good amount of leftovers.. You gotta love living in a place that has seasons!
