Chicken chasseur and buttery herb mash

Baby it’s cold outside.. Brrrrr!!

That calls for a chicken stew.. A tasty one..

And chicken chasseur is just the ticket.. Chicken thighs, onions, tarragon, white wine and herbs and stuff..

Cooked in the crockpot/slowcooker..

First the chicken skinned and browned off ..

And a selection of seasonings added.. The lid on and cooked on low for a full day..

For buttery herby mash. Rocket, rosemary and thyme chopped up ..

Added into a pan with unsalted French butter , milk and a burford brown egg yolk.. Seasoned as well..

The egg yolk does make the mash extra rich tasting.. Very good..

Umm yeah that is snaps of butter you see added in.. Feck it.. Go for it.. As I said it’s cold outside!

The sauce needs a little reducing..
