I have been reading again some of Heston Blumenthal. I have flipped from disciple to atheist over the years.
I decided to have another go with lamb chops. The recipe called for sous vide bath. I don’t have one (at £300 each it is no surprise!) So what to do?
I have a rice maker that keeps cooked rice warm at around 60 C for a long time. I looked it out, dusted it off and filled it 3/4 full with hot water and heated it up to 60 and set it to warm.
I placed 4 chops with a few sprigs of rosemary, thyme, bay leaves and olive oil in a bag, and vacuum sealed it.
The bag was then put in the rice cooker for an hour.
After the hour the chops removed from the bag and browned in hot oil for 4 mins turning every 15 sec.
