We had a really long walk, for us, about 5 miles, It took us just over an hour. We felt great but took the bus back, using our senior bus passes.
Feeling quite knackered after that so looked for something nice and easy for dinner.
Raked through the freezer and found some salmon fillets marinated in a kind of BBQ sauce. Got them from Costco a few weeks ago.
Defrosted them, took them out of the pack and baked them on a tray lined with tin foil at 190 C for 15 min.
In the meantime I took some chips I had prepared a couple of days ago and froze. I had cut them, boiled them for about 6 min but still not fully cooked, cooled them in the fridge for about 4 hours, deep fried them at 130 C until they were starting to colour, left them to cool then open froze them.
I preheated the deep fat fryer to 190 C and fryed them till crisp, around 8 min.
When the salmon was ready I removed the skin and served them simply, pouring the juices over the fish with the ‘thrice cooked chips’. Absolutely delicious with very little effort on the day.
If you can find the salmon it is worth buying them.
