Welsh lamb leg supper

i manage to score done great welsh lamb legs.. About half the price.. And right now all that kinda thing helps! 

So I broke two of them down freezing the bits for stews and citrus and kebabs.. And minced up some of the finer ‘trim’

 

Again headed towards the deep freezer.. 

And for another one of the legs.. 

 Slits made all over and this wonderful fickle fish anchovy butter

And fresh garden Rosemary tucked all over.. Then hit up with a balsamic glaze.. 

 

Looking great! Smelling divine! 

 That is placed on top of cut potatoes and sweet beets, pink onions and garlics..

   

 

Roasted. For two and a half hours..  
To go with? Well first a kind of green sauce.. Parsley, oregano, coriander, capers, Mrs middletons straight up oil and sherry vinegar.. 

   
Whizzed up..

 
And put with lovely baby potatoes whilst warm.. 

  
And of course the pan gravy! 

 

Plus the brussel sprout tops shredded.  And some flat yorkies! Good enough to hold the gravy though! 

 Not the greatest fancy pants looking.  That was not the idea.. This is eating food for a comfy Sunday 🙏✌️
