Mrs Fitz needs to take something into work today for sharing.. So I helped out by making sausage rolls .. Umm with a couple of different touches..

First the sausage meat.. Having had my good pal Dave the butcher grind down the pork trim, man I hope my new machine arrives soon. the addition of Lincolnshire style spices , medium pin head rusk and a couple of ‘extra’ Mr Fitz touches.. A kilo of very good sausage meat was created..

The perfect porkiness required for these snackable Scooby numbers..

Store bought pastry to save time..

Me Fitz sausage meat laid atop.. Now …. Not really for me this touch yet it seems to add an extra dimension to the rolls.

Bramley apple sauce.. From a jar as we don’t have any apples on our tree right now!

Just smeared on with a spoon.. Makes the job of rolling them a little harder .. Yet hey! I have smoked.. Oops! Sorry !! I meant eaten worse in my past .. Hahaha.. Ummm ahem.. (Never inhaled right?!) ..

Yet roll they do.. And with the help of a Cotswold leghorn egg they stick and glaze well.. Popped into the oven at 200 degrees.. Till risen and pastry cooked..

Left to cool on wire rack . Sampled of course!! And plonked onto a dish with some wild rosemary garnish.

Hope Mrs Fitz’s work colleagues like them.. I do!!

Oh… And the ‘fiesta’ bit? That’s for my pal the novice gardener in Canada..
