Ok.. For sure there are a zillion recipes for cooking the perfect roast chicken .

This is NOT one of them..

This one you simply roast in the bag

Yup that simple.. Just in the oven in a bag.. Which I must say is fantastic .. As the juices just rest real well.. And means you make the best gravy/jus..

So easy roasting on the bird..

The sides. ??

Mashed potatoes .. Cooked in chicken powder broth and bay leaves.. Am loving that style at the moment . Mashed by Mrs Fitz with butter, white pepper and sea salt.. Done really well in her great irish style ..

Also corn and petit pois.. With butter of course!!

And the best gravy of bisto!! You gotta love bisto.. It’s the business! Adding the roast chicken juices..

A lovely supper. Lovely indeed..
