Jacks: Tasty stir-fried baby scallops

We’ll here is another great use up dish for the start of the new year…

About a month ago I bought scallops, they were going cheap in Waitrose so being a Scot I bought a few packs and put them in the freezer for later.

I suppose a month could be regarded as ‘later’ so this morning I took a couple of packs out and placed them on the black magic trays for tonight’s dinner.

I pressed a clove of garlic with salt and grated some fresh ginger. These were fried in the wok with a mixture of sunflower oil and sesame oil for about 30 sec. I then added the scallops, fine rice noodles, finely sliced red pepper, sliced onion , a mixture of oyster sauce and dark soy sauce and a couple of tsps of cornflour mixed in half a cup of water.

This was constantly tossed and stirred until thickened and the scallops cooked, about 2 mins at the most. It was getting a bit dry so I added a little more water half way through.

Serve in hot bowls and enjoy. Absolutely delicious.

First time recipe but certainly not the last.
