Here it is.. and I wish I had it.. hmmm.. I have some lamb in the freezer… that’s tomorrow’s lunch sorted.. gonna take the dogs out to the woods.. that can be baking away while we walk.. what a lovely thing to return to.. cool!
Here’s Jack’s leg of leftover lamb shepherds pie..
Well the Xmas meals are over for another year but what to do with all the leftovers.
I slow roasted a leg of lamb and there was lots left over, not because it was below par just that many of my family stuck to the turkey or were almost vegetarian. This is actually a bonus.
Lamb cries (or should that be bleets!!) out to be covered in mashed potatoes cooked in the oven. So why disappoint. This is what I did.
Chopped up some celery and a carrot and fried it gently till cooked but still firm. I added half of what was leftover of the chopped lamb, including the onions and garlic the lamb was roasted in and a dash of Worcestershire sauce, tomato puree, tomato sauce and a cupful of the juice I saved from the roasting of the lamb.
Mixed it altogether and put it in a shallow casserole.
While all this was going on I boiled some chopped Duke of Yorks, not the childhood dance, but the potatoes I planted in the autumn specifically for Xmas and mashed them with butter for the topping.
I forked the top and brushed it with milk and put the casserole in the oven for 30mins at 180c.
Unfortunately the milk didn’t brown the top but it was absolutely delicious.
Leftover sprouts tomorrow! HO! HO! HO!
