I agree with my pal Jack.. too much rich food recently.. I can also feel it! .. although this may be tipping the scale of balance just a wee bit too far!! X

Ouch! Is that heartburn I feel. Probably too much fat, cream and grease over the past few days.
Decided to go a bit vegi tonight. I had some peppers left over that were in the fridge and probably would go off if not eaten in the next few days. So what to stuff them with. Had a look in my vegi books and found something I’d done on the BBQ last year.
I halved a couple of peppers and grilled them for about 15 mins.
In the meantime I boiled some rice and put to the side.
Fried finely chopped onion and garlic with some chopped almonds.
Scooped out the pulp and seeds from a few HG tomatoes and added it to the pan, off the heat, with the rice, some finely chopped mint, parsley and a handful of finely chopped sultanas. Seasoned with salt and pepper to taste (don’t be tempted to eat the lot!! I was).
Stuff the peppers with the rice mix and scatter with ground almonds. Place on a baking sheet and roast in the oven at 200c for about 15 mins or until done.
Delicious!
