Courgette bake…JT

This is from my Pal Jack.. too many Zucchini!

Well what a great way to enjoy courgettes. Had about half a kilo left so sliced them coarsely and sautéed them with garlic until tender. Chopped up a red and a yellow pepper that happened to be lurking in the fridge and microwaved for a couple of minutes. Mixed courgettes and peppers together and spooned into a loaf tin

Whisked up 4 eggs with creme fraiche and seasoned (should have been a bit more punchy) and poured this into the tin, shook it about a bit to ensure even distribution.

Baked it in a preheated oven at 200c for 45 minutes. Covered the top with tin foil towards the end as the top was starting to get too brown.

Had a seasoned slice while still warm with a glass of drambuie.
