Real? Why? Well its made by my mate Jack.. And I gotta tell ya.. It is the biz-ness.. Truly ‘short’ shortbread..
Here is the recipe ala Jacks instructions.. (Think he means greaseproof if it looks like its going brown.. Not clingfilm?) X
Whisk together the butter and the sugar.
Seive the plain flour and cornflour into the butter and sugar.
Mix gently with spatula then lightly by hand.
Put dough into a small Swiss roll tin. Flatten, slice into required shape, perforate with fork, cover with cling film and place in fridge for an hour or so.
Pre heat oven to 160. Remove cling film.
Place into pre heated oven for 30 to 40 mins. If starting to burn place a sheet of cling film on top and continue to cook.
