Making Sausages from scratch 

regular readers should know by now that making sausages has a firm place in my world.. 

It is great to make your own.. So so so simples.. And incredibly cost effective .. 

These have great free range pork.. And. Excellent beef trim added.. 

 

These ones are based on a Dublin recipe.. Think mace, nutmeg, coriander and some other bits.. With risk and breadcrumb ..and of course a good slosh of water.. 

Once your arm goes a bit numb from the squishing of everything you are there!   

The skins soaked.. Hog skins these.. I keep them in a jar full of salt in the fridge.. You get ages of a shelf life that way.. And means they don’t get stinky! 

Am using the hand cranker here.. 

  
See those air pockets? It’s cool they get smoothed out before tying up into links.. 

And ummm hanging off the kitchen cupboards. Ahem..

It’s that simple .. 

Some of them fried up Keith Richards style for scooby snacks.. I love a cold sausage from the fridge as a beer snackerooni.. 

  
(They are intentionally that dark!).. I like em that way! .. 

Please do give making your own a go.. Just ask the google gods if you are unsure on what you need to do.. And experiment ! You ain’t gonna kill yourself..
