A simple number of aubergine, long hot pepper ( I call these Turkish?).. Onion and olive oil , Cornish sea salt and balsamic vinegar.. Maille of course!
Chopped the aubergine into 1 cm strips.. Fried off in olive oil.. Then the onions.. Went red organic here.. Very sweet and lovely.. Then burnt the peppers on the gas flame..
Let them cool .. Stripped the skins.. and seeds.. Remember don’t rinse them under the tap! You lose all that goodness!!
Into the dish.. Added balsamic..
I tell you what this is a stunning dish!!
Reminds me in the simplicity of the Jewish salad my Algerian French friend makes us .. Stunning!
And inspired me to make this a Lebanese night.. Fattoush and baba ganoush is also on the cards.. Oh .. And some tabbouleh !!
