Leftover lamb thingy in Chinese lettuce rolls

Best thing about having wonderful food the night before is the leftovers that you get the following day for lunch.

Often the best part of a “sometime kinda average meal” is what you manage to turn it into to make something wonderful.

Today for lunch I had the leftover Lebonese thing and was lucky in that it was already delicious!

So having decided on blanching some Chinese lettuce leaves you know the one , the white crunchy number

Having simply poured boiling water on them leaves till just soft, reheated the Lebanesey thingy and popped on top of the leaves, added sauces on top of chola, Paul Newman’s Ranch dressing and a couple of sprinkles of jalapeno relish sauce., simply rolled up tucked under avoiding any drips..

Absolutely stunning lunchtime snack great!!!!
