Part Three of Jack’s Pig Head.. reads like he had a narrow escape, *Ala Part Two yet with some mac-guy-verr.. manoeuvres brought the piggie quite literally home.. not my thing offal.. I find it quite awful indeed (c’mon had to be said!! X)
Well got up this morning and had a look at the stock. Not gelling enough. S**t. So had to heat up about 750ml of the stock with a sachet of gelatine powder until fully dissolved
Spooned the meat into 2 loaf tins lined with cling film and poured in the dissolved stock until covered. Folded over the film to cover, and left to cool before putting in the fridge to set. Finger’s crossed.
No need. They had set perfectly after about 4 hours. Removed from tins. Nice and firm. Cut one in two and tasted it. Perfect. How did that happen?
Had a couple of slices for tea with a gherkin. And also poured some balsamic glaze over one slice (good decision).
All’s well that ends well!
