Elderflower champagne

As it’s festival weekend and fiesta friday what better than the most wonderful drink of elderflower champagne??

Ok.. I admit I have never actually made this before.. I reckons my pal the novice gardener will be impressed by my foraging here..

Yet we do have a bunch of elderflowers in our hedges.. I have been watching them for a while whilst I searched for recipes .. Thing is.. Most of them have now stopped being flowers and are now turning into berries .. So I reckon I better start researching elderberry wine stuff too huh?

Well I found lots of recipes .. Some saying only a small amount of flower heads where required .. Others saying loads.. Argghhhh! Why can’t it be simple? It should be right?

So this is Mr Fitz going into moonshine production ..

I have decided on what I reckon is good..

Perhaps 16 plus heads .. Two lemons.. Rind off and juiced.. 600 grams of caster sugar.. Why ? It seemed there or there abouts in line with many other recipes.. A splash of white wine vinegar.. A pal told me about that ..

And five litres of water.. Why did I buy the water? We have a reverse osmosis water tap in the kitchen.. Well I needed the plastic bottle. .. Am told that glass can go pop!!

So lemons mixed with sugar. Heads picked shaken gently to lose the bugs.. I only found one.. I left it go outside again .. It’s their food after all!

White wine vinegar splashed in..

Am told to leave it in a cool place for two days.. Check it’s working .. ( how the heck am I supposed to figure that out??).. If not add a pinch of dried yeast.. It should be ready in four days?

So here we go people..

Moonshine champagne … Look out the house of Moët ??

  3. Three recipes for you today?! Impressive! This is my fave though – I really want to make some elderflower wine, my Grandpa used to make it every year and I loved it as a child (yes, we drank it as children, lol! I didn’t realise it was alcoholic!), but all the elderflower around us that I’ve seen is over now, sadly. Next year though, definitely, now I know where I can find some! Save me a glass of this champagne please!
