These are just superb! They make a great brunch, lunch , supper or snack.. You really do have to try them out!

The original recipe comes from spooning with Rosie.. A neat cookbook to own. It reads well .. I have found though that it does need some flight additions to make the end result sing!
And song it does !
Everything is pretty much store cupboard.. Although if like me you don’t really keep carrots then that will mean a walk to the store.. I did that whilst on the phone to my attorney. He was going to make these yet didn’t as he also forgot the carrot!
The method is simple..
Two eggs beaten.. Add cornflour , Thai herbs from a handy pack.. Although just garlic, coriander and spring onion works well too!
Grated carrot adds crunch and sweetness yet seems to almost dissolve!
A drained can of corn and that’s it!
Heat some oil in a pan .. I used iberico pork fat as I have a pot that needs eating and it has a lovely flavour..
Fry either side till slightly crisp..
That’s it!
A brilliant food stuff!
With the addition if either a store bought dipping sauce.. Or making one up from honey, chilli, fish sauce, rice vinegar, mushroom ketchup and chilli and ginger sauce.. Or anything else you have handy yet the flavours of Asia need to be there..
